Does muting reduce video quality?
No. The picture data is copied byte for byte; only the audio is removed or replaced.
Why would I want a silent track instead of no track?
Some editing programs, players and upload services handle videos without any audio track poorly, for example by refusing them or misaligning added audio. A silent track avoids that.
How long does it take?
Usually just seconds, because nothing is re-encoded. Very large files take as long as it takes to read them.
Can I remove only part of the audio?

How a video’s sound is stored
A video file is a container holding separate streams: usually one video stream and one or more audio streams, interleaved so they play in sync. Because the streams are independent, the audio can be dropped by writing a new container with only the video stream, without decoding or re-encoding the picture. That is why muting here is both lossless and fast.
Silent videos are common on the web. Browsers only allow videos to autoplay if they are muted, so hero and background videos are usually published without sound. Removing the audio track entirely also saves bandwidth, as even silence consumes a little space when encoded.
Copyright detection is another reason people mute videos: music playing in the background of a recording can trigger claims or blocks on social platforms. Muting removes the problem, and you can add licensed music or narration later in an editor.
Some workflows expect an audio stream even when it is silent, for example certain broadcast specifications and older editing tools. The silent track option generates digital silence of the same length as the video, keeping such tools happy.
